Lemon Cheese bar
Base for lemon cheese bar:
Lemon curd:
- eggs: 2 (beaten)
- caster sugar: 1 cup
- plain flour: 1table spoon
- juice: 2 lemons
- zest: 1 lemon
To make the base: Preheat oven at 190 C.
Rub the butter into the flour and icing sugar and work together until the butter is absorbed. Press into 20cmx20cm buttered tin and bake for 20 minutes.
To make lemon curd: Beat all ingredients for curd mixture and pour over cooked base. Bake for a further 30 minutes. Sprinkle with icing sugar and chill. Cut in squares and sprinkle more icing sugar just before serving. Grated coconut is also best for garnishing cheese bar.
