carrot pudding

Directions:
  1. Preheat oven, boil carrots and mash.
  2. Beat eggs into carrots.
  3. In another bowl beat in sugar, baking powder and vanilla.
  4. Now fold carrot & sugar mixture in flour and combine it.
  5. Take a baking dish of any shape and pour flour mixture into it.
  6. Bake for 30 minutes, serve cool with fresh cream & nuts topping.
