carrot pudding
Ingredients:
- 1/2 kg carrots (chopped)
- 2 eggs
- 1 tsp baking powder
- 1 cup sugar
- 1/3 cup flour
- 1/2 tsp vanilla extract
- Preheat oven, boil carrots and mash.
- Beat eggs into carrots.
- In another bowl beat in sugar, baking powder and vanilla.
- Now fold carrot & sugar mixture in flour and combine it.
- Take a baking dish of any shape and pour flour mixture into it.
- Bake for 30 minutes, serve cool with fresh cream & nuts topping.
